Plantain gets a makeover in these two delicious recipes
There’s nothing simple about this plantain recipe! Plantains, also known as “culinary bananas,” are a neutral-flavored starchy fruit that can do wonders in the kitchen. In this episode of In The Know: Zero Waste Kitchen, Chef Adriana Urbina (@adrianaurbinap) turns plantain into vibrant and delicious tacos and vegan “beef” shredded vegetables.
Ingredients
olive oil
1 cup chopped onion
¼ cup shallots
½ cup red bell pepper
½ teaspoon salt
2 cloves of garlic, sliced
1 ripe plantain
4 tablespoons brown sugar
1 tablespoon smoked paprika
½ teaspoon cumin
Fresh cilantro, chopped
Corn tortillas
Instructions
First, start making your sofrito. heat some oil in a pan, then add the onion, shallot, red bell pepper and salt, then run the vegetables down for 3-4 minutes. Once the vegetables have sweated, add the garlic slices.
Remove the skin from the plantain. After removing the skin, turn it over and scrape off the white material from the other side.
Julienne plantain skins and add them to your vegetable mixture. The plantain skins will act as your vegan “shredded beef”.
Add brown sugar, chili powder, cumin and half of the cilantro and cook for 15-20 minutes.
Once the mixture is cooked, spoon it onto tortillas, top with the remaining fresh cilantro and enjoy!
